Ingredients

  • 3 cups gluten-free rolled oats

  • 1/2 cup pumpkin seeds

  • 1/2 cup smashed walnuts

  • 1/2 cup smashed almonds

  • 1/2 cup dessicated coconut

  • 1/4 cup ghee (or coconut oil for a vegan version)

  • 1/4 cup pure maple syrup

  • 1 teaspoon ground cinnamon

  • Pinch of salt (optional)

Method (Air Fryer)

  1. Prepare the Granola Mixture: In a large mixing bowl, combine the gluten-free rolled oats, pumpkin seeds, smashed walnuts, smashed almonds, dessicated coconut, and a pinch of salt (if desired). Stir them together until evenly mixed.

  2. Add in the Wet Ingredients: melt the ghee in a pot if it is not liquid. Then add in the ghee and maple syrup to the granola mix. Stir well to combine.

  3. Air Fry: Preheat your air fryer to 300°F (150°C). Place parchment paper or a baking sheet on the bottom of your air fryer basket.

  4. Spread the granola mixture evenly in the air fryer basket. You may need to do this in batches, depending on the size of your air fryer.

  5. Air fry the granola for about 10-12 minutes, shaking the basket every 5 minutes to ensure even cooking. The granola should turn golden brown and crisp up nicely.

  6. Once the granola is done, let it cool completely in the air fryer basket. Transfer it to an airtight container or glass jar for storage once cooled.
